Tasty Top Peach Pie

TASTY TOP PEACH PIE:  This Tasty Top Peach Pie is one of my Mom’s favorite recipes.  If you love peaches as much as we do, this makes a wonderfully sweet dessert!



unbaked pie shell
fresh peaches, peeled and sliced ( approximately 3-4)
2 tablespoons flour
1 cup sugar
2 tablespoons butter
2 eggs
pinch of salt
1/8 teaspoon cinnamon
dash of nutmeg



Preheat the oven to 450.  Once you peel and slice the peaches, arrange them evenly inside the unbaked pie shell, but do not pack the peaches tightly.  You want to allow the mixture to fill in the spaces.  The number of peaches you need to use depends on a couple of factors.  The size of the peaches is one, but you also have to consider the size of the pie crust you are using.  You need to allow enough room for the mixture that gets poured over the top.  If you put too many peaches in the pie crust, the topping may not have enough room.  While it is baking, the mixture can boil over the side of the crust and this will cause a loss of flavor.  Therefore, when you use a smaller size pie crust, only use enough peaches to fill about 2/3 of the space.  When using a large pie crust, you can fill about 3/4 of the space and still have enough room for the mixture. Once the peaches are in place, thoroughly stir the rest of the ingredients together and pour this mixture over the peaches.  Place the pie pan on a cookie sheet.  This prevents any drips from making a mess in the bottom of your oven if the mixture boils over.  Bake at 450 for 15 minutes. Reduce the heat to 350 and bake for an additional 30 minutes, or until done.  Store any leftover pie in the refrigerator to keep it from going bad.  If you wish, this pie can be frozen and thawed out later.
